Ribeye Nachos

Toppings of griddled street corn and a toasted salsa add freshness to an extra-indulgent version of nachos. Your whole family will be saying...Griddle Me This

Here’s how you’ll prep it (~15 mins)

  1. Pat steaks dry and season with your favorite fajita style seasoning, let come to room temp

  2. Wash peppers and tomatoes

  3. Slice your optional toppings as needed (lettuce, peppers, onions, tomatoes etc.)

  4. Layout serving line with tortilla chips, cheese and optional toppings

Here’s how you’ll make it (~15 mins)

The Street Corn

  1. Place 1-2 cups corn (raw or frozen work) in bowl

  2. Stir in 1/8 - 1/4 cup sour cream (optional sub mayo or chick-fil-a sauce) coating evenly, but lightly

  3. Stir in 1-2 tbs of taco sauce (optional sub paprika and chili powder to taste)

  4. Add a squeeze of lime juice

  5. Heat one burner medium heat

  6. Cook ~8 mins, alternating covering and stirring

The Main Dish

  1. Heat burner to high heat, lightly coat with oil of choice

  2. Add Ribeye

  3. Cook ~5 minutes per side

  4. Allow to rest for at least 5 minutes

  5. Add squeeze of fresh lime to finish, slice thinly

The Toasted Salsa

  1. Chop 1-2 hot peppers, Serrano recommended sub Jalapeno for less heat

  2. Chop 2 large tomatoes

  3. Chop ½ onion

  4. Chop 1-2 cloves garlic

  5. Cook over medium heat (same burner as corn) 3-5 minutes, stirring frequently

  6. Remove, finish with a squeeze of lime and garnish with fresh cilantro

Since I’m always cooking for kids, we do a buffet style serving line so everyone can make their own nachos

Optionally, lay out tortilla chips on a sheet pan and top with cheese, bake at at 350º for 5-8 minutes to melt and warm then top with ingredients to serve.
