Philly-Steak Smash Burgers

A simple twist on your usual burgers to make it a special occasion. Serve with a fresh salad and sweet potato fries and your whole crew will be saying... Griddle Me This

Here’s how you’ll prep it (~20 mins)

  1. Roll hamburger into ~2.5 inch balls (1/4 lb), season the outside with salt and pepper, set aside

  2. Thinly slice red onion into bowl, coat thoroughly with balsamic vinegar, set aside

  3. Thinly slice bell pepper,and optional mushroom, lightly season with olive oil, salt, and pepper

  4. Mix up optional garlic aioli (optional, but makes it fancy)

  5. Prepare salad, do not dress (the salad, you should be clothed at all times)

  6. Set out desired additional burger condiments and toppings for your serving line

Here’s how you’ll make it (~15 mins)

The Aioli

  1. ¼ Cup Mayo

  2. 3 cloves garlic, grated or pressed.

  3. Splash of lemon juice

  4. Salt and pepper to taste

The Fries

  1. Heat griddle to medium-high heat

  2. Lightly oil griddle with butter

  3. Cook for 7-8 mins over heat in a single layer, stirring frequently

  4. Move to low heat and cover, stirring periodically for 12-15 mins

The Veggies (while fries finish)

  1. Over medium-high heat

  2. Add red onions, bell peppers and mushrooms, keeping the onions separate

  3. Cook for 3-5 minutes until fragrant

  4. Move to an off/low burner and cover

The Smash Burgers (while veggies and fries finish)

  1. Lightly re-oil medium-high heat burner

  2. Place rolled up burgers and let cook for 2-3 mins

  3. Smash with lightly oiled burger press, then flip, cook 2-3 mins

  4. Add preferred cheese (I’d go provolone), cover to melt

Here’s how you’ll serve it:

To make smash burgers a special occasion, serve as double burgers, topped with peppers and onions and garlic aioli. Serve with fries and salad, garnish with a deli pickle.
