Chicken Souvlaki

A family favorite with fresh ingredients + homemade tzatziki. Serve with pita (or add rice) and a side of cucumber salad. Your family will be saying...Griddle Me This

Here’s how you’ll prep it (~20 mins)

  1. Cut chicken into about 1 inch cubes, and mix with oil, salt, pepper, paprika, and oregano

  2. Make the tzatziki, store in the fridge

  3. Make the cucumber salad, store in the fridge

  4. Thinly slice bell pepper, squash and red onion, season with olive oil, salt, and pepper

  5. Quarter tomatoes

  6. Shred arugula

Here’s how you’ll make it (~15 mins)

The Tzatziki

  1. Grate, blend or press ½ cup of cucumber

  2. Mix with 1 cup greek yogurt.

  3. Press 2 cloves garlic

  4. Add a tbsp of olive oil,

  5. Fresh lemon juice(about half a lemon, squeezed)

  6. A dash of red wine vinegar, to taste

  7. Add chopped fresh dill (about 1 tbsp), salt and pepper to taste

The Cucumber Salad

  1. Thinly slice cucumber and red onion

  2. Cover with a sprinkle of salt (about ½ tsp)

  3. Mix white wine vinegar (¼ cup) olive oil (2 tbsp)

  4. Add sugar, salt, (about 1 tsp) and pepper (about ¼ tsp) to taste

  5. Add a pinch of fresh dill, chopped

The Main Dish

  1. Heat at least two burners to high heat, add and spread oil of choice

  2. Add veggies first, cook for 2-3 mins, cover and lower that burner to medium heat. Stir regularly

  3. Add chicken to hot burner, stir regularly until cooked through (165º), about 6 minutes.

  4. Remove chicken and veggies from heat, scrape griddle clean

  5. Warm pitas on griddle until slightly toasted, about a minute on each side

Here’s how you’ll serve it:

We like to make pita style sandwiches or eat as souvlaki bowls (follow above but add time for cooking rice). For pitas, add chicken, veggies, feta, diced tomato, arugula, and tzatziki. Serve with cucumber salad.

  • 2 lbs boneless, skinless chicken or breasts, cut into 1.5-inch chunks

  • 2 Lemons

  • 3-5 Cloves of Garlic

  • 1 Bell Pepper

  • 2 Red Onions

  • 3 Large Cucumbers

  • 1-2 Squash (yellow or zucchini)

  • Grape / Cherry tomatoes

  • 4 oz feta cheese

  • 12 oz greek yogurt
